Crispy and Delicious, Without Frying: Roast Potato Wedges

Potatoes are one of the most versatile vegetables around, and they're also a vegetable loved by young and old alike, which is an advantage as they contain Vitamin B6, Vitamin C, potassium as well as other important minerals.

This healthy recipe is a version of French fries – just not fried!

Ingredients:

  • 3kg large baking potatoes
  • ¼ cup sunflower oil
  • 1tbsp paprika
  • 1tbsp onion powder
  • 1tsp garlic powder
  • 1tsp salt
  • 1tsp sugar

Method:

Preheat oven to 180 degrees Celsius (350 degrees Fahrenheit).

Peel and cut potatoes into wedges – 6 wedges per potato.

In a small bowl, mix together all the remaining ingredients.

Place the wedges in a large baking pan.

Pour over the mixed spice mixture and toss the potatoes to thoroughly coat.

Bake the wedges, uncovered, for around one and half hours, mixing halfway through, until golden and crisp.
